Mammaw’s Sloppy Joes
2 lbs ground beef
1 medium onion (diced)
3 cups Ketchup
½ cup Brown Sugar
1-2 Tablespoons Yellow Mustard
Salt (to taste)
OPTIONAL: ½ red bell pepper (or green/yellow or leave out if you don’t like bell peppers)
1. Brown ground beef, onion, bell pepper and salt in a skillet over medium flame. Once meat is cooked, pour off fat/liquid. Reduce flame to low.
2. Add ketchup, mustard, brown sugar. Taste and add more ketchup if mixture is too dry and salt if needed. The barbecue is tangy but sweet.
Cover and simmer 10 minutes. Spoon onto hamburger buns and serve with chips for a quick meal.
