Mammaw’s Cookin’ Meatloaf

 

Mammaw (Earlene) loves cooking for her grand-kids. Now she is sharing her  techniques  with you. She describes her husband as a meat and potato man– so if you need to satisfy friends or family with the same taste preference, here’s a good place to start. Don’t worry Mammaw wont make it too difficult on you but you will still satisfy those appetites. I know her grand-kids come by most Sundays and  I think that speaks volumes on how much they love her cookin’.

 

MEAT LOAF

from…….Mammaw’s Kitchen

2-3 lb. Ground Beef
1 Sleeve Saltine Crackers (crushed up)
2 Eggs
1 Medium or Large Onion (diced)
1/2 cup Ketchup (plus extra to go on top of loaves)
1/2 cup Green Pepper (diced) – Optional
Salt to taste
1) In a large bowl, add all ingredients and mix with your hands to combine. Always, Al-ways wash your hands after handling raw meat!
2) Form into mini-loaves about the size of your hand and place in baking dish.
3) Cover mini-loaves with ketchup (as much or as little as you want).
4) Cover dish with foil and bake one hour in a 350° oven. Remove foil during the last 15 minutes of cook time. Note: you might have to use paper towel to soak up the fat when you take the meatloaf out of the oven – otherwise it soaks back in.

Feeds 6-8. For a smaller portion, cut ingredients in half.
TIP: make this a complete meal by adding potato halves and baby carrots like you are making a roast.
