Baked Beans
(6) 16 oz cans Pork & Beans
½ lb – ¾ lb bacon (cut into small pieces and fried until crispy)
1 medium-large onion, diced
1½ cups brown sugar
1 cup ketchup
2 Tablespoons yellow mustard
1 Tablespoon Liquid Smoke
Salt to taste
1. Cut bacon into small pieces and fry over medium high heat. When it is half way cooked, add onions and continue to cook until bacon is crispy.
2. Open pork & beans and pour into baking dish. Add ketchup, mustard, brown sugar, liquid smoke and salt (not too much as the bacon is salty.)
3. Pour bacon and onions and some of the bacon grease into the bean mixture. Stir and taste. Add more salt or other ingredients to taste.
4. Bake at 375? for about an hour until juice thickens and the beans are hot and bubbly.
This recipe will serve 12-16. To make a smaller amount, cut the recipe in half.
NOTE: if you like your baked beans less sweet, cut the brown sugar to ¾ cup to 1 cup.
